This is the best season to get out the barbeque and enjoy your food smoked. And fish works best over the coals. Here are handy tips to keep in mind when grilling it...

1. It's quick: The first rule to remember is, fish cooks very fast over direct heat. You need to retain flavours and juice in the grilled fish so get it off the grill after a few minutes.

2. Place it right: The fish should not be placed at the centre of the grill (the hottest part) but more toward the edge.

3. It should not stick: The other thing to keep in mind when using a barbecue is that the fish does not stick. Make sure you brush the fish with a little olive oil before starting.

4. Flip carefully: Since fish is tender meat, you need to be careful when flipping it over the grill.

5. Taste test: A tricky part is to know when the fish is ready. Just poke it slightly with a fork; if it's done the meat will flake easily and appear thick.

6. To add: Keep lemon juice and a little butter close by while grilling and brush this over before removing from heat so as to keep it moist.

7. Sauce: Add a sauce just before or after the fish comes off the grill.

8. Marinate: If you are grilling oily fish, marinate them for about an hour or two before cooking. You also may not have to baste this fish.

9. Pre-heat: Always preheat the grill for ten minutes before putting the fish under it, this will give the fish a good sear mark.

10. Grill time: The amount of grilling time for different fish varies as per the thickness and size of it. Usually, the rule is, white fish needs just five minutes of cooking time.
